「食譜設計」簡單 Home party 小吃,今天就開趴!

開 Home Party 的最大樂趣莫過於可以毫無顧忌時間和旁人,開心時大笑,興奮時大叫,要玩要鬧,要瘋要癲,要說私密還是八卦話題都可以放心的大聊特聊。也因此,邀回家的人也是特別可以踏入這層領域的人。

第一次玩 Home party 是在我的舊同事家中,家裡就她一人,連同居者都可以省略的條件下,整個公寓就是我們的天堂,更合得來的是,我愛煮,她甘心做善後工作,兩個人從廚房做菜,到飯廳邊吃邊聊,然後客廳內邊喝茶邊看電影,再繼續玩做小甜點,最後直接在她家一覺到天明,一日吃完早餐才回家,這是完全理想的聚會。

這些時候的 Party Food,當然最好就是一些簡單易做,不用搞的自己蓬頭垢面,忙不過來的小菜式,第一次跟同事玩這類家家酒,我做了辣牛肉湯,讓同事看著火候,煮湯的當兒再做幾道小菜,這種現場現做的熱騰騰讓 Party 更熱烈起來!

今天來介紹一下,幾道簡單但又不輸人的 Party Food,可以邊吃邊聊的小菜!

 

1. 烤豬肉蔬菜捲

Ingredients:
Few slices   Pork slice
1/8               Carrot (cut into thin stick)
1/8               2 different color Capsicum (cut into thin stick)
2 tbsp          Japanese BBQ sauce
1 tsp             Lingham’s hot sauce
1 tbsp           Mirin
1 tbsp           Cooking wine

Methods:
1. Marinate the pork slices in all the sauces for 30 minutes.
2. Place carrot and capsicum stick in the center of the marinated pork slice, and roll it up.
3. Grill or bake the pork roll in a grill pan until fully cooked.

 

 

2. 芝麻起士燒餅

Ingredients:
(A): 1/2 tsp Instant yeast, 50g water, a pinch of sugar, medium protein flour (mix well and set aside for 5 minutes)  
(B): 300g medium protein flour, 140g water, 20g fine sugar, 1/4 tps salt, 30g olive oil 

(C): 1cup mozzarella cheese, 3tbsp mayonnaise, 1 tbsp Lingham’s hot sauce, 1 tbsp chives, 1 tps lemon juice (mix well and set aside)

Method:
1. Add in all ingredients (B) except water and (A) in a large bowl, mix well, and gradually add in water while kneading dough, until smooth shining surface dough formed (which takes about 10minutes), cover the dough with a wet cloth and allow it to raise to doubled size.

2. Press the dough to release the air bubble, and roll out dough into rectangle, smother a layer of (C) on the rectangle dough, followed by a layer of Mozarrella cheese, then roll the dough into cylinder and cut it into 8 pieces of roll, allow it to raise for another 50, brush some sugar water and sprinkle some sesame on the roll before putting it into oven. Bake at 170 degree celcius until golden brown (around 20 minutes).

 

 

3. 甜辣辣炸雞

Ingredient:

3             Chicken wings
3             Chicken drumette
3 tbsp    Lingham’s hot sauce
1 tbsp     honey
1tsp        Tabasco / Chili powder (optional)

 

Method:

  1. Heat a pot of oil to 160 degree celcius, deep fry the cleaned and dried chicken wings & drumette, to golden brown.
  2. Pour in Lingham’s hot sauce and honey ina sauce pan, bring it to boil, turn off the heat and stir in Tabasco.
  3. Dip the chicken wings and drumette into the sauce, and place it on the baking sheet, bake in an oven over 200 degree celcius. Turn the wings and drumette over after 5 minutes and continue bake for 3 minutes.
  4. Garnish it with white sesame and parsley.

 

4. 起士肉醬 Nachos

Ingredients:
200g        minced beef/chicken
1/4           onion
1 cloves   garlic
1 tbsp      Lingham’s Sriracha sauce
2 tbsp     tomato paste
a pinch   freshly grounded pepper
handful  pickled jalapeno

Method:

  1. Heat 2 tbsp of olive oil over medium heat, stir fried minced beef until fully cooked, set it aside, use the same frying pan to sautee onion and garlic until fragrant then add in Lingham’s Sriracha sauce, tomato paste and pepper, mix well and add in minced beef and cook until 70% of sauce absorbed by minced beef.
  2. Layer nachos, then minced beef sauce, finally jalapeno and cheese on a cast iron skillet, repeat.
  3. Bake the cheesy beef nachos in an oven over 180 degree celcius until cheese melted.

5. 法式蝦子冷盤

Ingredients:

4 prawns (cut into small pieces)
a pinch of salt and sugar
1tbs of white vinegar
1tbs of Lingham’s chili sauce
1tsp of minced garlic
1/2 avocado (cut into small cube)
1 frozen pastry sheet

 

Method:

1. Use a 3.5inch round cookies cutter to cut 2 round shaped pastry sheet, and bake it at 220 degree until it turned golden brown.
2. Mix prawns, white vinegar, Lingham’s chili sauce, garlic, salt and sugar in a bowl, set it aside.
3. Bring the baked pastry on a plate, set a 3inch round cookies cutter on the pastry, put a layer of avocado then a layer of prawn cocktail, garnish with chopped coriander and a slice of lemon.

5道小菜還擔心喂不飽,那就一定要做這一道拋打豬肉/雞肉,再煮一大鍋的飯任添至飽肚,但美味程度又完全不輸上面任何一道菜,一桌的無國籍菜色肯定會讓參與者充滿喜悅!

但以上只是供參考,可以依據來賓的喜好更改食譜,畢竟來參與 Home Party 的人都是自己熟悉的人,多少也知道對方喜歡的口味/飲食習慣,做飯就像送禮那般要送到心坎裡去,考慮的是對方的口味/喜好/需求,那才是最貼心的一頓飯,最讓人發自內心的喜悅。
