[Bali 2014] The authentic Japanese cuisine, Shiro

About 2 years ago, during our trip to Japan, we went to their local fish market –Tsukiji Fish Market, not only to see the culture and local life, but we also planned to have fresh-from-market-sashimi and of course their sushi set. Without doing much research I went to the market and found no the-mentioned-well-known-sushi-restaurants, and we end up having something yucky that I don’t even want to recall it now.

Life is always full of unexpected event. We received a dinner invitation from Shiro (a Japanese fine dining restaurant) to enjoy the authentic Japanese cuisine with most of the high quality fresh ingredient sourced from Japan and prepared by Hiroki Mimaki. Awww.. that’s was so great, I immediately replied and accept the invitation, and pack a sweet dress into my Luggage. Well, it gonna be my first fine dining experience in Bali, how could I not dressing up?!!

The night has finally arrived, we walked to the restaurant located at 2nd floor of One Eleven. It was new, modern, stylish restaurant with a lot of woodwork to create a truly authentic design yet welcoming warmth ambience.

We were arranged to sit by the bar, so we could have a good view over the whole food preparation process. Although I wasn’t a sashimi lover, but just giving a chance to the daily fresh ingredients from Japan, I decided to give it a go. I ordered myself a IDR 600,000 Zen Omakase set and a IDR 1200,000 Gin Omakase set for my mate (cum the photographer). As soon we placed the order, the chef Hiroki skillfully cut a few slices of raw fish, placed on the plate and decorate it with veggies by using long and thin chopsticks. Done and the appetizer was in front of us in minutes. We both were amazed at his skill and speed.

We had bisque, wild squid and sweet corn cake as entrées. They were so good, where it successfully perk up your appetite, and started to crave for more.

I had a sword fish salad for my second dish while my mate had a pair of fresh oyster in different sauce. The cooked outside raw inside sword fish was delicate, succulent and really fresh that you can taste the sea. My mate kept asking me to try on his oyster after he ate his tomato salsa oyster, he knew I never a raw oyster eater. But after a small bite, I swallowed the whole oyster in jelly seaweed dressing, the aftertaste was refreshing good. I think I could be a oyster lover after this.

Here come the sashimi!! I was excited with a weebit of fear inside, as I seldom take raw food (except veggies). But very soon I found I had been worried too much, I finished all of them with my delight and even stole a few pieces from my mate. It was so fresh and so delicious, that the sashimi would melt in your mouth. If you order the IDR 1200,000 set you will find the sashimi on your plate has a better quality that they taste just divine!! Then I realized I shall order some alcoholic drink to go with it, so I had Umeshu (plum wine).

It was pink inside, meaning?? It was raw. The very first time in my life, I took a bite, and again I fell in love, you don’t taste bloody, scary beef but heavenly soft and juicy, oh sooo nice!! It came a very close 2nd place for my most favorite dish.

I love the idea of green tea salt to go with tempura to balance the greasy aftertaste from the deep fried food.

Until this point you can see the differences between the premium and standard set, the premium is really premium with all higher quality and expensive ingredient (e.g., better part of sashimi, beef, assorted tempura and snow crab soup). Mate, you are so lucky to have a more capacity than me.

I was full when the chef Hiroki started to serve us sushi, nigiri and miso soup. But I still managed to finish my own set just to respect the chef and not to waste every single delicate sushi on my plate.

Overall, It was a really great dining experience at Shiro, from the hospitality, ambience, food (taste & presentation), drink and everything was just perfect for special occasion or a night to remember.

Mate and I enjoyed so much and we would definitely come back!
